Puerto Rican rice with Chicken or Pork Chops

SO I've tried to make this about 5 times now and I finally got it. I asked a number of Puerto Rican's which have different twists to their recipe, however I found a way that tastes SUPER authentic!

Porkt is this is primary type of meat they use, but feel free to use what you'd like.

Ingredients:
Goya SOFRITO (tomato based red mix) 3/4 to 1 cup needed
2 sazon packets
Adobo
2 chicken bouillian cubes
2 1/2 cups water (warm)
3 teaspoons oil
2 cups rice
pigeon peas/gandules (buy a small can if you can, only use 1/2 of the regular size can)

meat of choice

some people add olives but I don't YUCK (sorry)

Directions:

Season meat of choice with adobo (put aside)

In a nice size pot put SOFRITO, pigeon peas, chicken cubes, 3 teaspoons of oil on medium heat stirring around for around 3-5 minutes (or until cooking/steaming)

Add meat and cook on each side. (Doesn't have to be cooked through but browned on each side. The rest will cook with the rice. Use thinner meat chicken tenderloins or thin pork chops.

Next add 2 1/2 cups of warm water and put on high. Add 2 packets of sazon adobo and a pinch of salt. Bring to a boil. (Taste juice during this process for flavor) Add more adobo as needed, should be a tad salty (this will go away once cooked)

Add 2 cups rice, stir, it should still be boiling.

Place aluminum foil around cover. Stir once more and cover for 25 minutes. DO NOT lift cover at all! Trust me.

That's it! really works I was amazed.

DONT be greedy folks, each day I checked the price would slightly
drop! You have to realize tons of people are trying to get some type of reimbursement for their books and many people are using these sites to do so.

FOOD!

So... I'm no chef or anything but in the last week or so I've tried to find things to keep me busy (this blog being one of them). The other day I made steak tacos and they turned out pretty good, so i thought I'd share.
What you will need:
  • boneless steak, it was not to thin not too thick 
  • A 1/2 of an onion
  • Adobo seasoning or Lawrys
  • salt/pepper
  • Goya Cilantro base 2 spoonfuls
  • Goya Tomato base (found in the hispanic isle) 2 spoonfuls
  • tortillas (I prefer corn, but whatever floats your boat) 
  • sazon packet (adds a little flavor but mainly for the color)
Don't get turned away by these bases, they do not taste like either tomato or cilantro but add tons of flavor your your meat!

Preparation:

All I did was cut out the fat and slice the steak into bite size pieces, add the all purpose seasoning and let sit for about 5 minutes while you get your pan together and cut the onion.

Cooking:

Have your stove on meduim heat and put in your steak meat, let it cook for about 3-5 minutes and turn for another 3-5 minutes. If you feeling like the stove is too high turn it down, however you will need to keep your meat on longer.

Next add your onions and turn stove to low/medium heat and let cook. Add spoonfuls of bases and sazon and let cook, maybe another 5-10 minutes on low.

Sorry I'm not too good with the timing, but make sure you cook thoroughly, but make sure you aren't burning it! Once you think it is done take a thicker piece out and cut it in half to make sure it's fully cooking, no red meat!

As long as you cook it long enough turning evenly and are patient you will be fine.

Ok and WAAA LAAA:
You can add your topping as desired, but these had so much flavor none needed!

OH ... and a trick for warming corn tortillas:
Place a damp paper towel in the microwave put tortilla on it and place another damp towel on top.
Microwave for 25 to 30 seconds, no more no less or you will get a HARD shell =(


Allergy Season

For the past 2 weeks or so I've noticed that my allergies have kicked in. Hmmm I think this comes with age! My eyes itch and I sneeze continuously! I hate to take any type of medicine, but I can't go without Claritin.... It's kind of expensive but I've noticed coupons in the local ads etc. Any helpful advice on what works for allergies!?

I am not anything close to an extreme couponer but I think there are a number of ways to save on certain items.
First go online and search right through google, you will find a number of coupons, whether is be % off, free shipping etc
If you are shopping for SHOES, go to amazon.com and search. 9/10 times they will have the shoes readily available there and free shipping with a 25 dollar order.

Gel Magnetic Nail Polish

This new concept is similar to shellac strength wise. It is gel based and should last for about 3 weeks but will not harm your nails as acrylic does. The nail polish itself is one color. You paint one coast over your nails or each hand. You then paint another coast however after each finger you hold a magnet over it for about 5 seconds and the effects shows!
You can do this without the gel base, however it will not last as long and is just like regular nail polish. Nail polish can be found at Walgreens and CVS!!
